
Denmark wins gold in European chef championship
Led by former Geranium chef Sebastian Holberg Svendsgaard, the Danish culinary team triumphed with gold at the Bocuse d’Or, often referred to as the unofficial European championship for chefs. The victory also secures their spot in the unofficial World Championship of culinary arts in Lyon next year. Svendsgaard, along with Philip Nilsen from restaurant TreeTop, showcased their creations after five hours and 30 minutes of cooking on Tuesday. They presented a platter inspired by Norse mythology and the god Freyr. The chefs prepared a fish dish that featured West Sea cheese and herbs, burned and roasted fish with black wavy cuts, as well as other garnishes and a roasted cod sauce. The team outperformed Sweden and Norway, who finished with silver and bronze respectively. The is a repeat of Søllerød Kro chef Brian Mark Hansen’s 2022 victory at the same event.
